Spicy and moist, served with butter and an afternoon cup of tea after a long walk with the dogs.
Ingredienti:
- 125g/4oz butter
- 3 strong tea bags, e.g.: English Breakfast
- 150g/6oz dried fruit
- 125g/4oz caster sugar
- one orange, zest and juice
- 450ml/16floz warm water
- 275g/10oz self raising flour
- one level spoon of bicarbonate of soda
- pinch of salt
- cinamon stick
- ground cinnamon, nutmeg, cardamom
- cherry brandy and/or amaretto
- one preheated oven at 180°C/350°F/Gas mark 4
Técnica
- Make 300ml/10floz tea with the three bags, then pour in a saucpan along with the butter, cinnamon stick, sugar, orange juice and
zest, alcohol to taste (but not too much!) and dried fruit. Bring to the boil and simmer for about for minutes, then put aside
to cool (probably about an hour).
- Mix the flour, bicarbonate of soda, salt and spices, then remove the cinnamon stick from the pan and add to the bowl. Mix
completely then pour into a greased and floured 1kg/2 pound loaf tin.
- Bake for an hour, then remove and leave to cool for ten minutes before turning onto a wire rack.
